National Pie Day


Well, who woulda thunk it? There's even a day to celebrate pie. Today, January 23rd, is National Pie Day. And I would be remiss if I did not share with you, my loyal and devoted readers, my all-time favorite pie.

A friend gave me this recipe for Derby Pie over 15 years ago. And I can assure you, it is our all-time-hands-down favorite. I can mix this up in about three minutes. It has just the perfect combination of yummy gooey-ness, pecans, and chocolate chips. I tell people that it tastes sort of like a chocolate chip cookie.

Give it a whirl and make your family smile on National Pie Day!

Derby Pie
  • 9 inch regular pie crust-unbaked
*******

  • 1 cup sugar
  • 1/2 cup flour
  • 2 eggs
  • 1 stick butter, melted
  • 1 teaspoon vanilla
  • 1 cup pecans
  • 1/2 cup chocolate chips
Mix in order listed. Pour into pie crust. Bake at 325 degrees for 35 minutes. Center will puff up. A knife inserted in the middle should come out "clean." Top with whipped cream or ice cream.

Hi Kim,

Thanks for stopping by! I found several ornament patterns at Sunshine's Creations. Specifically, this post was where I got the snowman idea. I tweaked it a little to get a shape I liked.

Hope you also get some good ideas there. She has a very creative blog.

We decided upon chicken for dinner tonight prior to 10 pm last night, however, I just read this post at 10:35 am. Am I allowed to add it to our dinner for tonight, or will it have to wait for Friday since I didn't actually decide upon it until after 10 am?

That all depends, Roy. You can still serve it; however, you can not, in good conscience, consider this a truly productive day, having not solidified your entire menu prior to 10AM.

Next time, try to do better.

As I sit here eating the last few cookies left from 'bring all your favourite calorie laden and decadent foods galore' day at work, and sipping this very sweet Red Rose tea, and making sure I have everything to make this treat, that I know we have had at least once at a church dinner, I am compelled to ask, can I add some sugar to the recipe? After I finish these Milk Duds, and another slice of that Cranberry Torte, I'm not sure that anything is going to be sweet enough to suit me....

Yes, but perhaps it's just a ploy to get to go to the Fresh Market to pick up that absolutely critical component to ensure that our meal is truly satisfying and all that it should be for my deserving family?
Wow....I wonder if I can make an any longer sentence than that?

I dont think you can consider that I noticed an omission, rather I nurtured my desire to make this thing as sweet as the law will allow!

You'll have to forgive us, but we have been a bit preoccupied here, and supper planning has suffered.

We DO know that we'll almost always be having JASMINE rice and JASMINE tea. There is probably JASMINE potpourri in the little tiny crock pot thingy, and of course, we'll be using the JASMINE pattern china.

Other than that, we're business as usual....

I have to report that National Pie Day was huge success at our home!
The Derby Pie® was phenomenal!!!
It also provided the extra benefit of chocolate chips for our pancakes this morning!
