What joy the gospel gives me. I can approach the throne of God with confidence, not because I've done a good job at my spiritual duties, but because I'm clothed in the righteousness of Jesus Christ. ~ C.J. Mahaney

I Love That Shoop!

When our little friend, Sophie, was less than two years old, her mama was feeding her soup one day. She declared, "I love that shoop!" Well, this is a "shoop" we just love! I start this family-pleaser in the crock pot before lunch and let it simmer all afternoon. It makes the house smell wonderful!

Italian Vegetable Soup
  • 1 lb ground beef
  • 1 cup sliced carrots
  • 1 cup diced onion
  • 1 cup sliced celery
  • 2 cloves garlic, minced
  • 1 16 oz can tomatoes
  • 1 15 oz can kidney beans (I use garbonzos)
  • 2 cups water
  • 5 teaspoons beef or chicken bouillon
  • 1 tablespoon parsley
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon sweet basil
  • 1/4 teaspoon black pepper
  • 2 cups shredded cabbage (optional)
  • 1/2 cup elbow macaroni
Brown beef in skillet, drain well. Put all ingredients (except cabbage and macaroni) in crock pot on low for 6-8 hours or high for 4 hours. Add cabbage and macaroni to the crock for the last 30-45 minutes. Ladle into bowls and top with shredded cheddar or Parmesan.

Maggie and Sophie, our "shoop" loving friend.

This 'shoop' has been slowly cooking away in our crock post since about 8:00 this morning. It's going to be supper tonight with some homemade bread. But wait....I think those are carrots in the pictures! Oh well, looks like we'll find out how it is without them! We're also just a little mystified by that 1/2 elbow macaroni!
Thanks for the recipe!!!

Well, if you're expecting Better Homes and Gardens, you've come to the wrong blog! :-)

Thanks for finding my mistakes, Alyssa! Yes, there is supposed to be a cup of carrots and 1/2 cup of elbow macaroni. I've edited the recipe to reflect that.

Guess it might be difficult to halve an elbow macaroni.....never tried it!
